 crock pot beef stew recipeA crock pot makes cooking very simple and hassle-free. It is ideal for working women, who can make the preparation before going off to office and then easily get the dinner at night when they come back home. It hardly requires any efforts and constant attention.

Many kinds of recipes can be cooked in a crock pot, but one of the very famous recipes that are always associated with a crockpot is beef stew. Beef stew is a hearty and filling stew, cooked with beef cubes and vegetables. The recipe is quite simple and is perfect for cooking in a crock pot.

All you need to do is just sear the meat pieces and chop up the vegetables to finally throw them all in the crock pot to cook them. So, if you are not feeling like putting in much effort to cook the dinner after a tiring day, you can easily whip up this crock pot beef stew recipe.

Required ingredients

2 lbs. of beef stew meat
? cup of red wine
2-3 tablespoons of all-purpose flour
2 small bay leaves, fresh or dried
1 large onion, peeled and cut into bite sized pieces
3 carrots, peeled and cut into bite sized pieces
2 tomatoes, cut into bite sized pieces
1 teaspoon of fresh thyme, chopped
1 tablespoon + 1 teaspoon of olive oil
2 stalks of celery, cut into bite sized pieces
? cup of canned whole tomatoes
? lb. of potatoes, peeled and cut into bite sized pieces
? cup of frozen or fresh peas
1 teaspoon of fresh basil, chopped
2 large cloves of garlic, peeled and minced
1 teaspoon of fresh rosemary, chopped
1 cup of low sodium beef broth
Salt, to taste
2 tablespoons of tomato paste
Freshly ground black pepper, to taste

Required Utensils

1 crockpot
1 stirring spoon
1 skillet
1 tong
1 knife
1 colander

Method of preparation

1. ?Put the carrots, onion, celery stalks and the tomatoes into a colander and then transfer the colander into the sink. Then rinse each of the vegetables separately until they are thoroughly cleaned. Once done, give a few shakes to the colander to drain all the excess water out of it and then place it on your counter.

Now take out the carrots and peel them one by one. Once done, slice the carrots into thick pieces and then cut the sliced pieces in half. Next, take the onion and cut it in half. Peel off the skin of the onion and then cut it into large chunks, just like the carrots.

2. ?Follow that by cutting the tomatoes into big wedges as well. Cut the potatoes into large chunks. Finally, take the celery stalks and cut them into big chunks. Once everything is ready, take the meat and trim off streaks of fat from it if you want. Then cut the meat into 1-inch sized pieces. Once done, take a skillet or saut? pan and place it on the stove. Turn the knob to light up the flame and then set it on medium. Wait for the oil to heat up and then put the beef cubes into the pan.

3. ?Season the beef pieces with a pinch of freshly ground black pepper and salt. Make sure that you sear the beef pieces in one layer as all the beef cubes must come in direct contact with the pan.

Let the beef pieces sear undisturbed for 4-5 minutes or until they develop a nice brown color. Once that happens, flip the beef pieces to sear the other sides as well. Sear the beef pieces nicely on all sides and then fish them out of the skillet. Place the beef cubes on a separate plate and then throw some of the onion cubes into the skillet.

4. ?Saut? the onions for 4-5 minutes and then set them aside on a plate. Next, put the minced garlic into the skillet and saut? it for 1-2 minutes. Once the garlic is saut?ed, add the tomato paste to the garlic and then saut? the mixture for another 1 minute. Once the time elapses, pour the red wine into the pot to deglaze the pan. Scrape up the brown bits from the bottom of the pan and then let the mixture simmer for 1-2 minutes or until it starts bubbling.

5. ?Once that happens, remove the skillet from the stove and turn off the flame. Next, put the seared beef pieces into the crock pot and add the saut?ed onions and the sauce to it. Then sprinkle the flour all over the beef pieces. Stir the mixture to dissolve the flour into the cooking liquid and then season the mixture with salt and freshly ground black pepper. Follow that by adding the bay leaves, fresh basil, fresh thyme, fresh rosemary and the whole tomatoes.

6. ?Give a brief stir to the mixture and then add-in the potatoes, carrots, peas, onions, celery and the tomato wedges to the rest of the ingredients in the crock pot. Finally, pour the beef broth over the mixture and give a brief stir to let the broth seep down to the bottom of the crock pot.

Once done, put the lid on the crock pot and cook the stew for 4-5 hours on high or 8-9 hours on low or until the beef pieces turn very tender. Once done, ladle out the stew in individual serving bowls and serve with warm rice or mashed potatoes.

Tips

1.? ?It is very important to let the beef sear on all sides very nicely.
2.? ?You can also add a little cayenne pepper powder to add a little spiciness to the dish.
3.? ?You can either cook the stew for 4 hours on high or for 8 hours on low.
